Huevos Rancheros

Crispy tortillas, sunny side-up eggs, rich refried beans & a chunky, spicy salsa...this dish is all about bold, traditional Mexican flavours. Simple, hearty & made to be shared.

Ingredients
- 1 pack La Tortillería Tortillas
- 1 pack La Tortillería Totopos
- 3 long green chillies
- 1/2 onion
- 5 tomatoes
- 1 garlic clove
- 8 eggs
- 500 g refried beans
- 150 g dried riccota cheese
- Oil
- Salt & pepper to taste
Cooking Instructions
- Dice up the tomatoes, chilli & onion. Finely chop the garlic.
- Heat a bit of oil in a pan & fry the garlic, diced onion & chilli until it softens. Once that’s looking good, chuck in the diced tomato. Season with a pinch of salt & pepper, cook it all down until it starts to turn into a chunky salsa.
- Fry the tortillas until they’re nice & crispy.
- Cook the eggs sunny-side up.
- Warm up the refried beans in a pan or microwave.
- Spread a bit of salsa on one side of the plate. Lay down 2 crispy tortillas, then top them with the eggs. Pour some more salsa over the eggs & serve with warmed refried beans with cheese on top & a few crunchy totopos for that extra bite.
